FIELD: equipment for grinding of different materials, may be used for preparing of meat farce. ^ SUBSTANCE: knife has plate with curved blade, main and peripheral surfaces arranged in parallel with one another. Main surface is defining in conjunction with auxiliary surface sharpening angle provided with increased hardness zone extending along blade. Said zone is formed by coating having maximal thickness reducing to zero value to both sides from point of intersection of cutting edge rounded line and sharpening angle bisecting line to point of intersection of auxiliary surface generatrix and peripheral surface generatrix. Maximal thickness of coating is less than 0.25 of rounding radius. ^ EFFECT: increased resharpening time. ^ 2 dwg |
