The invention provides a texture assessment apparatus, known in the art as a tenderometer, comprising a load cell responsive to movements of a driven wall arrangement, and preferably incorporating a lost-motion device. The invention also provides a tenderometer driven by a linear actuator, a tenderometer in which measured forces are transmitted in tension, and a tenderometer where the movement of a wall arrangement is provided by means of a rack and pinion drive.
