<P>PROBLEM TO BE SOLVED: To provide a method for cooling a food by which a heated fish paste product is effectively cooled and also retained in moist condition in a production process of the product to improve its quality. <P>SOLUTION: The method for cooling the food comprises a process of making water adhere to the surface of the fish paste product subjected to a heating process, and a process of evaporating the water at the product to cool the product. Mist spray is effective for water adhesion. Blowing air to the water-adhered surface of the product accelerates evaporation of the water and also improves the efficiency in evaporation latent heat. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
