<p><P>PROBLEM TO BE SOLVED: To provide a quality evaluation apparatus of fruit vegetables for obtaining quality in an object to be measured in a state, where an error is reduced, although a plurality of types of fruit vegetables having different beam attenuation rates can be measured. <P>SOLUTION: A reference information measurement mode for obtaining light reception information for reference by projecting light to a beam attenuation means G for calibration instead of the object to be measured for receiving by a light reception means 2, and a quality information measurement mode for obtaining the quality information of the object to be measured, on the basis of light reception information for evaluating quality and light reception information for reference obtained by projecting light to the object to be measured can be freely switched. Additionally, the beam attenuation means G for calibration is composed so that the beam attenuation rates can be changed and adjusted to the plurality of types of fruit vegetables having different beam attenuation rates. Then, in the quality information measurement mode, quality information is obtained under different measurement conditions for each of the plurality of types of fruit vegetables having different beam attenuation rates.
