A dried sugar-gelatin composition which is readily soluble in cold water is prepared by dissolving the sugar and gelatin in water, the sugar: gelatin ratio being at least 7: 1, preferably 8:1 to to 10:1, foaming the solution to a density of, about 0.1- 0.6 gm/cc, casting the foam into a continuous layer not exceeding about 150 mils thicks, the surface on to which it is cast being at not more than about 140‹F., drying the layer at not above I80‹F. for not more than about 5 minutes by the application of heat under the surface on which it is cast, whilst passing heated air over and in contact with the layer, and doctoring the dried product from the surface at not above about 130‹F. Conveniently the layer is cast on to the surface of an impervious metal belt. The term "about" as employed herein means Œ10%. |
