PURPOSE: A composition for fishy smell elimination using herb medicines is provided, thereby efficiently eliminating fishy smell from fish without damage of distinct flavor and taste of fish and soaking the smell of medicinal herbs into fish. CONSTITUTION: The composition for fishy smell elimination using herb medicines comprises the steps of: mixing 1.5g of Caururas chinensis Baill, 0.5g of Agstache rugosa O. KTZE, 2g of Glycyrrhiza Radix, 20g of garlic, 10g of ginger and 50g of salt in 1000ml of water; heating the mixture at high temperature, and heating the mixture at 90 to 100 deg. C for 30 minutes; filtering the heated mixture; and cooling the filtered solution to 5 deg. C, and adding 0.7 volume% of 95% ethanol into the filtered solution. A method for eliminating fishy smell from fish comprises dipping fish in the fish smell eliminating composition at 3 to 5 deg. C for 5 to 6 hours, and removing water and maturing it at 0 to 3 deg. C for 24 hours. |
