An apparatus for measuring recrystallisation in a frozen sample includes a sample holder (5) which includes a recess (7) for receiving a sample receptacle (9). A cooling mechanism alters the temperature of the sample while it is in the sample holder. A light source (15) directs a beam of light at the sample in the sample holder via a light path (13), and a detector (17) detects the intensity of transmitted light passing through the sample. Means is arranged to asses the amount of recrystallisation occurring in the sample from the detected intensity of light passing through the sample.
