<p>Cookie dough making process, comprises formation of three mixtures, the first and third of which are then fed into a main mixer (26) that produces dough. The process, using eggs, sugar and flour to make sponge fingers, consists of weighing the egg whites and adding optional additives. beating them to make a first mixture; beating the yolks, sugar and part of the flour to make a second mixture and adding the rest of the flour to it to make a third mixture. The first and third mixtures are then combined to make the cookie dough. A continuous process uses one line (10) with a beater (24) to produce egg whites beaten into stiff peaks, a second line (12) with a beater (36) for the yolks, and a third line (14) to deliver the flour to a mixer (38) for the beaten yolks and flour The first and third mixtures are then fed into a main mixer (26) that produces the dough.</p> |
