The invention relates to a method of identifying the variety and geographical origin of the Theobroma cacao plant species. The inventive method is characterised in that it comprises the following steps: preparation of a specific polyphenol extract from the material used; analysis of the specific polyphenol extracts using multidimensionsal heteronuclear NMR, and recording of same with a time delay d6 = 65 ms in order to magnify the polyphenol signals; and, once the variables have been sorted using the Carlier step-by-step method, multidimensional statistical analysis of the quantitative data obtained from the integration of the previously obtained NMR cards in order to select the most pertinent data, such as to obtain the data that are characteristic of the geographical origin of the material in question.
