<P>PROBLEM TO BE SOLVED: To develop a collagenase inhibitor containing as an active ingredient an ingredient originated from a farm or marine product having been used as a food or food raw material and not having a problem on safety, and to establish a method for utilizing the same. <P>SOLUTION: This collagenase inhibitor is characterized by containing the extract of Humulus Lulus L. The food or food raw material is characterized by containing the collagenase inhibitor. The method for producing a beer or sparkling liquor having a collagenase-inhibiting activity is characterized by adding 50 to 90 % of the Humulus Lulus L. to be used to a wort, boiling the mixture, adding the remaining Humulus Lulus L. to the obtained high temperature wort, leaving the mixture, filtering the left mixture, and then fermenting and ageing the filtrate. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
