<P>PROBLEM TO BE SOLVED: To provide a fermented seasoning having an excellent flavor and a good taste, by using onion as a main raw material. <P>SOLUTION: This fermented seasoning is obtained by heat-treating vegetables containing the onion as the main raw material, then adding malted cereals, common salt, and yeast to the vegetables, and further fermenting and ageing the vegetables. The fermented seasoning is preferably subjected to grinding, juicing, and filtering treatment, and further to refrigeration, to freeze-drying, or to heat treatment with a retort. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
