摘要 <P>PROBLEM TO BE SOLVED: To provide a fermented seasoning having an excellent flavor and a good taste, by using onion as a main raw material. <P>SOLUTION: This fermented seasoning is obtained by heat-treating vegetables containing the onion as the main raw material, then adding malted cereals, common salt, and yeast to the vegetables, and further fermenting and ageing the vegetables.
