PURPOSE: Provided are a dried yellow croaker containing natural polyphenols and a method for processing the same. The polyphenols are extracted from natural products, such as grapes, apples, green tea, japanese apricot, quinces, persimmons, pine needles, and the like. The dried yellow croaker has soft fish meat and a savory taste, and is good for prevention of adult diseases, such as hypertension and arteriosclerosis. CONSTITUTION: A method for processing a dried yellow croaker containing natural polyphenols comprises the steps of: selecting yellow croakers by size and salting them for 2-8 hours; washing them with saline water 2-3 times and drying them; pulverizing natural products containing polyphenols and followed by extracting polyphenols with water at 60-80 deg.C with agitating for 2-3 hours; filtering the extract by centrifugation for 20-40 minutes; dipping the yellow croakers in the polyphenol filtrate; injecting the polyphenol filtrate into the yellow croakers; and drying them. |
