It is intended to provide a method of automatically separating oyster meat from thigh, which comprises, in the final step of separating thigh with bone, detecting the boundary between the whitecap at the end of the femur and the meat area including the oyster meat without resort to an unstable operation of inserting a cutter into the part thus detected. An apparatus for separating oyster meat from thigh consisting of a clamper 15, a grooved Y-shape guide 20, which is located in the upstream side toward the downstream side of the running line of the clamper and has open ends respectively toward the running directions, and another Y-shape guide 16 provided with a cutter.
