ACIDIC OIL-IN-WATER TYPE EMULSION COMPOSITION

An acidic oil-in-water type emulsion composition having a high diglyceride content. It is an acidic oil-in-water type emulsion composition which contai ns fats comprising at least 30 wt.% diglycerides and a yolk treated with an enzyme selected among esterases, lipases, and phospholipases, characterized by containing an antioxidant in an amount which is 1,000 to 10,000 ppm of the o il phase comprising the fats and is 0.4 to 4.5 in terms of weight ratio to the net amount of the yolk in the enzyme-treated yolk.
