PURPOSE:To provide the title composition eatable or drinkable without feeling bitter taste stemmed from amino acid, improved in taste and flavor, containing amino acid giving bitter taste, peptide, and perfume and spice. CONSTITUTION:The objective composition containing (A) amino acid(s) giving bitter taste (pref. isoleucine, leucine, lysine, methionine, phenylalanine, tryptophan, valine, arginine, histidine, citrulline, ornithine or proline) and/or peptide, and (B) perfume and/or spice (e.g., peppermint, orange, lemon, cinnamon, vanilla). It is preferable that the amino acid concentration be 0.9-50wt.% in the final product. |
