<P>PROBLEM TO BE SOLVED: To provide a method for producing noodles without boiling intended for reducing much load to be given to the environment caused from a large quantity of water, energy and materials required when forming noodles such as wheat noodles. <P>SOLUTION: This method for producing noodles without boiling comprises at first passing mixed liquid obtained by stirring flour with an aqueous solution such as water at the time of finish through a tube of a desired diameter without boiling noodles, and heating the tube to obtain expected noodles.
