An oil or fat additive characterized in that ume apricot fruit is contained; a method of inhibiting oil or fat deterioration and method of suppressing oily smoke characterized in that the oil or fat additive is added to an oil or fat; and an oil or fat composition comprising the oil or fat additive. There are provided an oil or fat additive that ensures high safety and low cost and exhibits excellent oil or fat deterioration inhibiting activity and oily smoke suppressing activity; and a method of inhibiting oil or fat deterioration and method of suppressing oily smoke wherein the oil or fat additive is used.
