PROBLEM TO BE SOLVED: To provide a method for sterilizing sliced fish by which sliced fish comprising fillet, dress (dry goods) or the like can be efficiently and surely sterilized; and to provide a sterilization device. SOLUTION: The method for sterilization of sliced fish comprises the following process: cutting the head off from edible fish, dividing the fish into a meat part and a bony part, internal organs and mesogastrium bones to obtain sliced fish, and sterilizing the sliced meat using an aqueous solution sterilizer. The whole of the surface of the sliced fish is sterilized by soaking the sliced fish in aqueous solution having kinds and concentration acceptable in view of sitology while stirring until the sterilizer is fully permeated into the skin part of the sliced fish.
