PROBLEM TO BE SOLVED: To provide a storable duration enhancer capable of suppressing microbial proliferation in food and good in terms of food taste as well, and to provide a method for producing food with enhanced storable duration along with no impairment of its taste using the enhancer. SOLUTION: The storable duration enhancer, synergistically suppressing microbial proliferation in food and impairing no food taste even if added to the food, comprises a combination of a cyclodextrin with lysozyme.
