摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for preserving Sparassis crispa by which Sparassis crispa can be preserved in a state close to an uncooked one as much as possibly to improve palate feeling thereof so as to promote distribution of the Sparassis crispa as a food. <P>SOLUTION: This method for preserving Sparassis crispa comprises the following process: drying harvested Sparassis crispa at 20-80°C for 5min to 8h; and freezing the dried Sparassis crispa followed by keeping the frozen Sparassis crispa in a freezer. A Sparassis crispa frozen product is obtained by the method. A method for cooking Sparassis crispa comprises using the Sparassis crispa frozen product to serve as a dish made from the Sparassis crispa as a raw material. <P>COPYRIGHT: (C)2005,JPO&NCIPI</p>
