PURPOSE: Provided are a method for manufacturing kimchi seasoning sauce using artificial chinese cabbage juice and the kimchi seasoning sauce manufactured thereby. The kimchi seasoning sauce has a good taste and flavor and taste consistency to maintain its quality. CONSTITUTION: The method for manufacturing kimchi seasoning sauce comprises the steps of: preparing artificial chinese cabbage juice by dissolving 1-10 wt.% of saccharide including glucose and fructose, 1-10 wt.% of salt, 0.1-3 wt.% of amino acid and 0.5-5 wt.% of pH regulator; adding 1-20 wt.% of mixed seasoning of pepper powder, sugar syrup, corn gruel, ginger, garlic, welsh onion, seasoning and salt fermented fish and 3-7%(v/v) of a starter including fermentation bacteria to the juice; and fermenting the mixture at 30 deg.C for 24-36 hours.
