PURPOSE: Broiled Chaga mushroom eel made by adding an extract of Chaga mushroom(Inonotus obliquus) during simmering or broiling an eel is provided. The product has the efficacy of Chaga mushroom as well the characteristic taste and flavor of broiled ell. CONSTITUTION: In the method for manufacturing the titled broiled eel using Chaga mushroom, 500g Chaga mushroom is mixed with 20L water, heated at 100deg.C or more for 12hr and then filtered. The Chaga mushroom extract is added with kelp extract, pure soy sauce, roasted carrots, roasted green onion, roasted garlic, roasted onion, sugar, starch syrup, a licorice root, whole cinnamon bark, clear strained rice wine and roasted ell bones and then simmered to make sauce for broiled Chaga mushroom eel. |
