PURPOSE: A method of making a food product by heating food contained in a sealed container of an autoclave while repeatedly controlling the pressure of the autoclave is provided. It enhances the taste and flavor of food without the destruction of nutrients. CONSTITUTION: The food is prepared by the following step of: providing an expansion and contraction function to the container having no expansion and contraction function, introducing a sealed container containing contents into an autoclave; elevating the temperature of the autoclave to 60 to 150deg.C within 0.1 to 3min; elevating the temperature of contents to 60 to 150deg.C by repeatedly controlling the pressure of the autoclave to a negative pressure or a positive pressure; maintaining the temperature of contents at 60 to 150deg.C for 0.1 to 60min by repeatedly controlling the pressure of the autoclave to a negative pressure or a positive pressure; and adjusting the pressure of the autoclave to normal pressure and taking out the sealed container from the autoclave. |
