PROBLEM TO BE SOLVED: To blow steam from all directions inside a furnace, to eliminate steam blow irregularities, to perform excellent humidification baking, to prevent the application of an excessive pressure in steam generation and to prevent loads on a steam generating and processing mechanism. SOLUTION: The steam generation tank of a deck oven is provided with a steam blow-off part on an upper surface and is disposed on an upper fire heater arranged above a hearth inside the furnace and near a ceiling wall inside the furnace. The steam generated inside the steam generation tank is blown off through the steam blow-off part to the ceiling wall, diffused in all directions, made to flow downwards along the peripheral edge of the steam generation tank and turned to the hearth from all directions inside the furnace.
