PROBLEM TO BE SOLVED: To provide a wood drying method for drying wood only in a pressure vessel without accompanied by the movement of wood, and a wood drying apparatus. SOLUTION: In the wood drying apparatus 1, wood is housed in the pressure vessel 3. First, saturated steam is supplied into the pressure vessel through a boiler 5 and a boiler steam supply valve 7 to perform steaming in a steaming process. Next, the pressure vessel is reduced in pressure by a vacuum pump 13 in a pressure reducing process. Succeedingly, overheated steam is supplied into the pressure vessel through an overheated steam generator 9 and an overheated steam supply valve 11 to dry wood in a drying process. In the drying process, a drying condition is controlled based on the temperature in the vessel set by the overheated steam generator 9 and the pressure in the vessel set by the boiler steam supply valve 7 and the vacuum pump 13.
