New microcapsules (A), of average diameter 0.0001-5 mm, consist of a shell membrane and a matrix containing hydroxytyrosol (I). Independent claims are included for the preparation of (A), by: (a) forming a matrix from gel formers, cationic polymers and (I), optionally dispersing the matrix in an oil phase, treating with an aqueous solution of anionic polymer and optionally thus removing the oil phase; (b) forming a matrix from gel formers, anionic polymers and (I), optionally dispersing the matrix in an oil phase, treating with an aqueous solution of cationic polymer and optionally thus removing the oil phase; or (c) forming an oil-in-water emulsion from (I) and an oil in presence of emulsifier, contacting with an aqueous solution of anionic polymer, contacting the obtained matrix with an aqueous solution of cationic polymer and separating the obtained encapsulation product from the aqueous phase. |
