<P>PROBLEM TO BE SOLVED: To provide dried noodle and dried noodle food improved in preservability and convenience by reducing water content and Aw (activity of water) without causing deterioration in quality of dried noodle. <P>SOLUTION: The dried noodle is obtained by preserving noodle under such environment as to be in a relative humidity of ≤35% and at 0-30°C for one week to one year.
