摘要 <P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing, in a simple method, chocolate-containing food where the insides of the porous air gaps of base food material having a porous structure are filled with chocolate at a given content, and the chocolate and the base food material are integrated with each other. <P>SOLUTION: The method for producing chocolate-containing food comprises the following processes: (a1) an impregnating process of subjecting the base food material having porous air gaps in at least one part and having a water content of 0-50 wt.% to depressurization into 10-50,000 Pa, making the base food material come into contact with melted chocolate while keeping the depressurization state followed by raising the pressure on the material to impregnate the inner part of the air gaps of the base material food with melted chocolate; and (b) a cooling process of solidifying the chocolate in the base food material via cooling. <P>COPYRIGHT: (C)2004,JPO&NCIPI
