NEW PROTEIN HAVING ARABINANASE ACTIVITY

PROBLEM TO BE SOLVED: To provide a new protein having arabinanase activity.

SOLUTION: The protein has an endo-form arabinanase activity to arabinan. The optimum temperature of the activity is 20-40°C and the activity at 0°C is ≥30% of the maximum activity. Dregs formed in a processed fruit juice can be removed at a low temperature by using the protein in the processed fruit juice. The proliferation of compost bacteria at the initial stage of proliferation is promoted at a low temperature by using the protein for composting a vegetable-based waste.
