<P>PROBLEM TO BE SOLVED: To provide an enzyme, called (R)-hydroxynitrile lyase, and to provide a method for producing (R)-cyanohydrin using the enzyme. <P>SOLUTION: The method for producing the (R)-cyanohydrin compound comprises obtaining a composition having (R)-hydroxynitrile lyase activity derived from at least one plant selected from Passiflora edulis, Eriobotrya japonica, Chaenomeles siensis, Prunus persica and Sorbus aucuparia and catalyzing a carbonyl compound and a cyanide by the composition. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
