<P>PROBLEM TO BE SOLVED: To provide a (S)-hydroxynitrile lyase. <P>SOLUTION: The (S)-hydroxynitrile lyase and an enzyme composition having (S)-hydroxynitrile lyase activity are provided respectively, each of which is obtained by subjecting a suspension of a Baliospermum plant to ammonium sulfate fractionation followed by ion-exchange chromatography.
