摘要 <p><P>PROBLEM TO BE SOLVED: To provide Sake (rice wine) for cooking containing an organic acid (citric acid) at a high concentration, having excellent deodorizing functions, or the like, and high cooking effects with an excellent flavor. <P>SOLUTION: The Sake for cooking has 13-16 strength alcohol concentration,≥30 wt./vol. mg% of citric acid concentration and 300-500 wt./vol. mg% of amino acid concentration. Furthermore, the Sake for cooking is obtained as follows. Rice for brewing the Sake having 70-85% milling rate and an acid-forming Koji prepared by using an acid-forming Koji mold are used in 10-25% Koji rate. Protease in an amount of 0.05-0.1 wt./wt.% based on the total rice is further used in combination to carry out alcoholic fermentation at 120-140% ratio of water for brewing the Sake at 18-22°C temperature. Aging and fermentation at 20-40°C are then carried out and the resultant unrefined Sake is pressed to produce the Sake for cooking. <P>COPYRIGHT: (C)2004,JPO&NCIPI</p>
