The invention relates to a process for drying granular material, which comprises two main stages; in the first stage, the fluid is brought to a relative humidity of up to 60 % and a temperature of 48 C, and to a humidity of 42% and a temperature of 62 C, in the last stage. The invention also relates to a vertical dryer for carrying out the process, centrally provided with a drying channel (11) made up of wire mesh, divided in a plurality of compartments, each compartment having a group of blowers (15) located at the bottom, on one side, and another group of blowers (18) on the other side at the top.
