<P>PROBLEM TO BE SOLVED: To provide a preservability improver as a liquid composition containing at high concentration polyglycerol fatty acid monoester having bacteriostatic action to microorganism leading to degeneration of food and causing no segregation or precipitation even if being preserved for a long period. <P>SOLUTION: The preservability improver for food comprises (a) polyglycerol fatty acid ester as ester of polyglycerol with an average polymerization degree of 2-3 and fatty acid, having ≥50 mass % of monoester in the ester, (b) a thickening stabilizing agent and (c) water. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
