<P>PROBLEM TO BE SOLVED: To provide a method for producing a calcium complex, by which the calcium complex used for enriching calcium can simply be produced from casein micelle. <P>SOLUTION: This method for producing the calcium complex formed from casein-binding calcium and/or colloidal calcium and a phosphopeptide is characterized by hydrolyzing the casein micelle with a protease, lowering the pH value of the hydrolyses product to ≤5.4, removing the insoluble peptides and the un-hydrolyzed casein, and adjusting the obtained solution containing the casein-binding calcium and/or the colloidal calcium and the phosphopeptide to ≥6.6. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
