The invention relates to a method for enzymatically producing a plant hydrolysate during which a mixture of plant and/or bacterial enzymes are, in an aqueous medium that is buffered to a pH value ranging from 6 to 8, permitted to work on a comminuted plant material that has been obtained from the entire plant or from parts thereof. The obtained plant hydrolysate is then isolated out in the form of dry powder from the reaction solution by filtration and subsequent spray drying.
