DISPERSE STABILIZER

摘要

PROBLEM TO BE SOLVED: To provide a disperse stabilizer capable of stably dispersing a solid material having relatively large shape contained in a liquid food and having large specific gravity in a solid material-containing liquid food.

SOLUTION: Disperse stability (prevention of sedimentation, floating and diffusion of a solid material) of the solid material in heated state can be imparted to a solid material-containing liquid food without remarkably changing the viscosity by adding a reversible and thermally responsive galactoxyloglucan produced by partially removing a side-chain galactose of galactoxyloglucan to the solid material-containing liquid food.
