摘要 PURPOSE: Bread containing herb medicine extracts and liquid calcium and a method for producing the same are provided, which bread has improved color, flavor and taste, and texture taste although the herb medicine extracts and liquid calcium are added, so that children can easily take the herb medicine extracts and calcium from the bread. CONSTITUTION: The method for producing the bread containing herb medicine extracts and liquid calcium comprises adding 5%(v/w) of herb medicine extracts which are prepared by hot water extracting deer horn, Achyranthes bidentata BL., Lycium chinense MILL., Euphoria longan STEUD., Eucommia ulmoides OLIV. and Schizandra chinensis BAILL.; and 0.025 to 0.25%(v/w) of liquid calcium which are prepared by mixing 6.2000 wt.% of calcium powder which is prepared by adding 18.00%(w/v) of calcium carbonate with calcium content of 49.5% and 7.2%(w/v) of dextrose into a mixed solvent comprising 97.14%(w/w) of apple vinegar with total acid of 6.6, 0.2%(w/w) of phosphate, 0.15%(w/w) of lactic acid, 0.01%(w/w) of citric acid, 1.2%(w/w) of tangleweed extract and 1.3%(w/w) of malt extract, and spray drying the mixture; 91.6298 wt.% of brewed vinegar with total acid of 6.5; 1.4000 wt.% of glucose; 0.3500 wt.% of phosphate; 0.3000 wt.% of lactic acid; 0.1000 wt.% of acetic acid; 0.0200 wt.% of citric acid; 0.0001 wt.% of antifoaming agent; and 0.0001 wt.% of grape aroma into wheat flour; kneading the mixture to prepare dough and baking the dough.
