YEAST WITH HIGH GLUTATHIONE CONTENT, AND FOR FOOD PRODUCT, MEDICINE OR COSMETIC OBTAINED BY CULTURING THE SAME

PROBLEM TO BE SOLVED: To supply a raw material for a food product, a medicine or a cosmetic having a high safe image at a low cost by obtaining a yeast strain rich in meal experiences, belonging to Saccharomyces cerevisiae and producing glutathione with an unconventionally high potency (containing ≥5wt.% of the glutathione based on the dry weight) without using a gene recombination technique and culturing the resultant strain.

SOLUTION: The strain obtained by applying mutating operation to a strain belonging to the Saccharomyces cerevisiae as a parent strain without using a gene manipulation technique is screened to thereby provide the yeast which is not a gene recombinant and contains ≥5wt.% of the glutathione based on the dried fungal body. The resultant yeast is cultured as the parent strain for use in desirable applications. It is especially useful to employ one or two or more species selected from the group consisting of FERM P-19072, P-19073 and P-19074.
