PURPOSE: An apparatus for controlling kimchi maturation of a kimchi refrigerator is provided, thereby optimally controlling the conditions for maturing the kimchi, so that taste and freshness of kimchi can be maintained for a longer period. CONSTITUTION: The apparatus for controlling kimchi maturation of a kimchi refrigerator comprising a body(10) containing a storage chamber(12), heater(15) installed on the surface of the storage chamber(12) to heat the storage chamber(12), and at least one storage vessel(23) contained in the storage chamber(12) is characterized by comprising a pH detecting portion(25) installed in the storage vessel(23) and detecting pH of kimchi; and a controlling portion controlling the on/off operation of the heater(15) according to the pH data of kimchi detected from the pH detecting portion(25).
