<P>PROBLEM TO BE SOLVED: To provide a method for producing a bakery product with a filling, capable of producing the product composed of a wafer-like crisp envelope and the creamy filling on an industrial scale. <P>SOLUTION: This method for producing the bakery product with the filling includes a step for spreading wafer batter into a layer (9) having a thickness of 0.5 to 5 mm and another step for adjusting a moisture content thereof to 15-30%, wherein a dough sheet (11) which is plastically deformable and can be mechanically processed is prepared, the envelope (14) for the filling (3) is formed out of the dough sheet, the formed envelope is baked in an oven (15) at 150-250°C for 15-30 sec to prepare a continuous tubular half-finished product (14a) with the filling and the baked envelope (2) the moisture content of which is 3-8% which is typical of the wafer, and the prepared half-finished product is transversely cut into cuttings, so that each of the cuttings is formed into the bakery product with the filling. <P>COPYRIGHT: (C)2004,JPO |
