摘要 PURPOSE: Provided is a method for manufacturing germinated brown rice which has good texture, shows excellent stability to microorganisms and is easily cooked. CONSTITUTION: A method for manufacturing germinated brown rice having excellent texture and stability and easily cooked comprises the steps of; partially removing an epidermal layer of brown rice by polishing; dipping the partially polished brown rice in weak acid solution, followed by injection of air, changing of solution every 5-10 hours, and germination for 10-30 hours; and treating the germinated brown rice at a high temperature of 100-140 deg.C for 5-40 minutes under high pressure.
