PROBLEM TO BE SOLVED: To easily and inexpensively reinforce and improve the vanilla flavor of a flavor material added to frozen dessert as vanilla essence without spoiling its original taste and flavor. SOLUTION: The reinforcement and improvement of vanilla taste and flavor comprises adding barley tea or its condensate to vanilla flavor-added frozen dessert. The barley tea is blended at 0.5-10.0 wt.%, preferably 3.0-5.0 wt.% based on the frozen dessert to reinforce and improve the vanilla taste and flavor. COPYRIGHT: (C)2004,JPO
