<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a stably viscous acidic oil-in-water emulsion without causing any phase transition. <P>SOLUTION: The method for producing the acidic oil-in-water emulsion comprises stirring a water phase and a oil phase each containing an acidic substance together with an emulsifier in an emulsifying machine, measuring current loaded on the emulsifying machine by using a load current ammeter provided on the emulsifying machine, and detecting the emulsified condition through observing change in the load current so as to control stirring power. <P>COPYRIGHT: (C)2004,JPO |
