PROBLEM TO BE SOLVED: To provide a retort sterilization method for greatly lowering the possibility of deterioration after retort sterilization. SOLUTION: This retort sterilization method comprises a retort process and a cooling process. In the retort process, the differential pressure between the real internal pressure at a retort temperature of a maximum normal internal pressure canned food product at normal temperature and the internal pressure of a kettle at the time of retort sterilization is brought to less than the pressure resistance value of a positive pressure canned food product. In the cooling process, the internal pressure of a retort kettle is made lower than the internal pressure of the kettle at the time of the retort sterilization and lowered to cooling pressure higher than atmospheric pressure after starting the pouring of cooling water and before the real internal pressure of a minimum normal internal pressure canned food product at normal temperature lowers to the internal pressure of the kettle at the time of retort sterilization. The temperature of the cooling water is set higher than the temperature at which the real internal pressure of the minimum normal internal pressure canned food product reaches to the cooling pressure.
