In a process to shape a food product e.g. ice cream in a form, the food is rendered plastic by freezing and then sub-divided into portions. Each portion is then placed in an undercut form which is cooled to -79C or lower. The form has two or more parts which meet at a common interface. One or more parts are sub-divided into two or more tool segments. The tool has two or more separation interfaces by means of which it is sub-divided into segments. The Segments may be separated from each other without damage to the tool or ice cream shape. |
