Production of breadcrumb-coated meat products comprises: (1) dry coating a portion of meat with flour or breadcrumbs; (2) wet-coating it with breadcrumbs; (3) dry coating it again with flour or breadcrumbs; (4) wet-coating it again with breadcrumbs; (5) dry coating again; (6) rearranging the portions: (a) between (1) and (2); or (b) after (5); and (7) allowing the portions to fall from a height after at least one of the stages. |
