METHOD FOR SOAKING SUGAR-GLAZED ADZUKI BEAN IN MOLASSES AND DEVICE THEREFOR

PROBLEM TO BE SOLVED: To provide a method for efficiently soaking beans to be a raw material of sugar-glazed Adzuki beans in molasses under extremely easy work. SOLUTION: The method for soaking sugar-glazed Adzuki beans in molasses comprises keeping beans (B) completely boiled in a boiler (1) in a soaked condition with molasses (M) which is continuously thrown into the boiler (1), heating the beans only for required time and forcibly evaporating water so as to automatically continuously increase the brix of the beans (B) from an initial light molasses condition and acquire a thick molasses condition of a final goal from a liquid surface (L-L) of the molasses (M) lowering with water evaporation.
