FROZEN PRODUCT OF UNLEACHED OR LITTLE LEACHED MINCED FISH MEAT

Frozen minced fish meat product, prepared by bringing minced fish meat or minced and dehydrated fish meat into contact with oxygen by means of stirring, adding one or more freeze-denaturising inhibitors to it and freezing, is new. In other methods the minced fish meat or minced and dehydrated fish meat as a starting material is usually utilized only after leaching. In this process the frozen minced fish meat product is prepared without leaching or with little leaching and prevents decomposition of trimethylamine-N- oxide due to oxidation.
