The filtering system for a deep fryer comprising a vat (2) containing the oil (3) and a heater consists of a tank (6) that collects and recycles the oil, divided into compartments (11, 12, 13) by a screen (8) and filter (9). The third compartment of the tank contains a pump (17), preferably of centrifugal type, that is immersed in the filtered oil and returns it via a pipe (23) to the vat. The system can be adapted to fit existing deep fryers.
